Yields one 9-inch square coffee cake
This cake is wonderfully good and easy to prepare. Have all the ingredients at room temperature, about 70 degrees. Grease a 9-inch square baking pan.
Wisk together thoroughly:
1 ½ cups all-purpose flour
1 cup sugar
2 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
Beat well in a large bowl:
1 cup sour cream
2 large eggs
Add the dry ingredients and beat until just smooth. Over beating tends to toughen the cake. Spread in the greased pan. Sprinkle with streusel (below). Bake until a toothpick comes out clean, about 25 minutes. Cool on a rack.
