Apple Cake

3 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
¼ tsp salt
¼ tsp allspice
1 cup granulated sugar
1 cup packed brown sugar
1 cup cooking oil
2 beaten eggs
1 Tblsp vanilla
3 cups chopped apples (I used shredded)
1 cup chopped toasted pecans
2 tsp finely shredded lemon peel
Sifted powdered sugar
Grease and lightly flour a 10 inch tube pan
Stir together the flour, baking powder, baking soda, cinnamon, allspice and
salt. Set aside.
Combine sugars, oil, eggs, and vanilla and beet with an electric mixer on medium speed for 2 minutes. Add the dry mixture and beat on low till just combined. Fold in apples, pecans, and lemon peel. Pour batter into the prepared pan. Bake at 350 degrees F for about an hour. Cool cake on wire rack for 10 minutes, then remove from pan and cool
completely. Sprinkle with powdered sugar. Cover and store in the fridge.
