5 cups pinto beans
1 lb ground beef
1 can favorite salsa
Bread or sopapillas
Soak beans over night with a sprinkle of baking soda. Rinse in the morning. Boil low all day. In the evening, brown some ground beef. Add it to the beans. Right before serving there should be very little broth, but soft beans and tender beef. Add a whole can of your favorite salsa. We make our own, from one jar of tomatoes (home canned preferable) with 4 roasted green chiles and one onion. Serve with fresh homemade 100% wheat bread or sopapillas. (This makes leftovers for three days for our family of 4 eaters. You can eat the beans with chips, in a quesidilla, or in a sandwich.)
