Pumpkin Split Pea Soup

Serves about 6
5 cups Split Peas
1 Tbsp vegetable broth without msg
1 can of pumpkin or fresh pumpkin—see note in recipe
2 cups cream
Soak split peas over night with a sprinkle of baking soda. Rinse in the morning. Boil low all day adding vegetable broth, and pumpkin. (If you carve your pumpkin on Halloween, you can cook it the day after and freeze it for use in this soup). Just before serving, swirl in cream. Yum! This makes leftovers for my family. Emma usually has 4 bowls at one sitting, so we need leftovers. It is her favorite soup.
